This is a hearty soup perfect for the cold late fall and frigid winter seasons. We can all appreciate a bowl of delicious hot soup after spending some time out in the snowy outdoors.
5 slices bacon
4 15.25oz cans whole kernel corn
1 medium onion
2 stalks celery
2 medium carrots
1 potato
1 48oz can chicken broth
1 tbsp minced garlic
3/4 tsp dried thyme
2 tbsp butter
salt and pepper to taste
- Dice onion, potato, carrots and celery.
- Coat frozen corn evenly with olive oil
- Brown bacon in a large stock pot.
